Cultivar by Mary Dumont (1 Court St, Boston, MA)
In early 2017, chef Mary Dumont will open Cultivar in Downtown Boston, offering sustainable cuisine inspired by our diverse landscape, informed by the restaurant’s proprietary hydroponic garden. The culmination of her culinary career, Dumont will debut the independent restaurant inside the historic Ames Hotel, awarded Boston's Best Hotel by Boston Magazine in 2014 and Editor’s Choice Best Downtown Hotel by Yankee Magazine in 2016. A 2006 Food & Wine Best New Chef, Dumont is most recently known for her time as Executive Chef/Partner at Cambridge's acclaimed Harvest restaurant from 2007 to 2015. Chef Dumont’s 1-acre garden, along with the restaurant’s proprietary hydroponic garden—enabling fresh food production year-round—will drive Cultivar’s seasonal menu, along with foraged food, sustainable seafood, and dry-aged meats.
